These Mediterranean Chicken Bowls are stacked with tasty toppings and sides. I’ve been making variations on these for a while now for my family and they are great because you can spend an hour or two cooking and end up with this super herby and crusty chicken as well as a ton of tasty sides that you can use to assemble rice and salad bowls, sandwiches and wraps, etc.

Also, this whole set of recipes takes just over 1 hour total to make!

Marinades for Days

Quick and easy marinades like the one we are using for this recipe are great for a couple of reasons. First off, they are easy to assemble, generally just requiring a quick whisk. They also generally use shelf stable and cheaper ingredients that you can buy in bulk like different spices, soy sauce, olive oil, etc.

Because of these two factors, they are a great option for meal prepping or cooking at scale for a large group of people since it’s such an easy to prep and generally affordable way to quickly tenderize and impart a ton of flavor into your meat.

And, if you’re looking to add some fresher ingredients, you can easily add in fresh aromatics like garlic, shallots or your fresh herbs of choice.

Pro Tip: When it comes to marinades and imparting flavor, I find that, pound for pound, soy sauce and tamari are in a class of their own. I use them commonly in savory non asian cooking like sauces and stews all the time. See more in ‘Tamari on Everything’ section below.

Browning Your Chicken

Unlike browning large cuts of beef chuck roast that can take a long time to cook until tender, chicken breasts and thighs will get there in just under 10 minutes of cooking. Because of this, you basically want to be browning your meat the entire time that it’s cooking. This will allow you to develop a dense crust without overcooking your chicken.

For this recipe we are using boneless and skinless chicken thighs which are very forgiving. So we don’t have to worry too much about our meat drying out like a chicken breast but we also don’t still want to overcook our meat.

Pro Tip: Since we normally meal prep this recipe, skinless is the way to go as the skin will just get soggy in the fridge while also retaining so much of that browned flavor.
