Recipes: Easy Tomato Sandwich
It was late night, I was hungry and happened to have a bunch of super ripe heirloom tomatoes on hand. I decided to make a quick little tomato sandwich!
It was late night, I was hungry and happened to have a bunch of super ripe heirloom tomatoes on hand that I got from the farmer’s market the day before. So naturally, I decided to make a quick little tomato sandwich for Sami and I!
For the Bread, I went with a classic style pullman loaf or Italian Pan Carrè, which is essentially a fluffy white box loaf. We have a local Italian bakery that always has them on hand and it’s become one of our go to’s over the years.
In my opinion, a good tomato sandwich really should be all about making the tomatoes the star of the show. Here, we’re stacking our tomatoes tall and adding a couple of Shiso leaves that I had on hand for an herby element. We’re spreading some labneh on our toast as well to help add a creamy element to help tie everything together. I’ve become a big fan of Labneh over the past couple of years and it’s essentially a strained yogurt. It’s pretty similar to a Greek yogurt, which you can easily sub for Labneh if you can’t find it easily. Note: To make this vegan, replace the labneh/yogurt with a strained vegan yogurt or spreadable vegan cheese.
Make sure to season each of your tomatoes with a bit of salt as you stack them up. For this one, we’re garnishing with some high quality olive oil, lemon juice and some Aleppo pepper that I got from my friends over at Edy’s Grocer.
To me, this is truly one of the best examples of simple and delicious, this sandwich is all about celebrating and letting those late summer tomatoes shine. I hope you enjoy!
