Recipe Highlights:

  • A quick 15-30 minute marinade is all you need to get your chicken thighs ready for cooking while a longer marinade gives you more tenderization and flavor distribution.

  • Blanching your Sugar Snap Peas followed by an ice bath locks in their color and texture, keeping them vibrant and crispy.

  • Seasoning your cucumbers with salt and soaking your red onions in warm water are great tricks for each ingredient when making salads like this one!

  • Adding a base of Labneh or Greek Yogurt to your plate adds a creaminess and tang that helps to tie everything together while adding protein.

  • Toasting some nuts and seeds is a great way to add texture and flavor to your salad.
